About this deal

In a small saucepan over medium heat, warm the water, unsalted butter, granulated sugar, and salt. Warm until the butter has melted. Smoked Salmon Éclairs. Mini choux pastry éclairs filled with smoked and poached salmon, crème fraîche, soft cheese, single cream and butter, with lemon juice and chives. Finished with a bronze lustre. Available from 29 November. Sugar and salt - You can opt for granulated or caster sugar. The sugar adds a gentle sweetness, and the salt seasons the dough. Both add flavour, preventing the choux buns from tasting bland. While you may have seen choux pastry profiteroles in recipes like a profiteroles tower or profiteroles cake, this classic profiteroles recipe is distinguished by its indulgent profiterole filling of ice cream and topping, warm chocolate sauce.

It wasn't until famed chef Antoine Carème evolved and perfected the recipe and created a tower of caramel-dipped profiteroles called croquembouche that they became popular.Iceland is offering some tantalising options this year. Stir vigorously with a wooden spoon until the mixture comes away from the sides of the pan into a ball. Return to a low heat and cook the pastry for a few minutes, beating it constantly. Tip into a large bowl to cool. To make the topping, melt the chocolate and butter in a heatproof bowl over a pan of barely simmering water, making sure the bottom of the bowl does not touch the water, or in a microwave. Leave to cool slightly, then dip the top of each choux bun halfway into the chocolate and allow the excess to drip off. Before the profiteroles pastry came out served on a plate to me, I remember looking at the dessert menu and feeling entirely intrigued. Pate a choux pastry filled with ice cream and drenched in warm chocolate sauce.
