Our favourite rolls are at Fraq’s Loster Shack and Hawksmoor, but now that Ocado sells frozen lobster tails they’re very easy to make yourself at home. Place the lobster tails on a baking sheet and bake for 10-12 minutes, or until the meat is opaque and cooked through. For a more formal presentation, try plating the lobster tails on a large white serving dish, garnished with fresh herbs and lemon wedges.

Remove and discard the stomach sac, gills and intestinal thread, although you may want to keep the liver – known as tomalley, it's considered by some to be a delicacy. Twist off the legs, flatten them with the back of a knife then get to work on digging out the flesh using a pick or the end of a teaspoon.
