Yeast: William Grant and Sons use liquid yeast, but the exact strain is a closely guarded secret. This yeast is referred to as a Speyside yeast and is utilized in all three Speyside distilleries. What’s in a NameMalted Barley: The all-natural barley is initially steeped in pristine spring water sourced from a spring in the nearby hills. The grain is then carefully spread across a traditional malting floor (there are only a handful of traditional malting floors left in Scotland). The malt men then turn the barley by hand using shovels and wooden paddles until the malted barley is ready for the kilning process.
