About this deal

Even though I am a recipe developer, one would think I have great food around me 24/7. But the reality is some days I walk in the door from work and a good ole peanut butter and jelly sammich is all I have the strength to make, ha! Shhhh, that’s just between us, mmkay. There are also various theories about the origin of the term ‘caponata’. In one theory, they say it derives from the capone or lambuga fish (mahi mahi), which Sicilians traditionally ate with a similar sweet and sour sauce. Another belief is that the name comes from the Latin noun ‘caupona’ (tavern) and from the adjective ‘cauponia’, meaning ‘tavern food’. Of course, there are other theories too.

Casarecce is originally from Sicily. But, it is also a very popular pasta in other parts of Southern Italy. Therefore, the best sauces to serve with this pasta are those of traditional Southern Italian origin with typically Mediterranean ingredients. Most of the 6 sauce recipes I have listed below are traditional Southern Italian recipes. They are also mostly vegan or vegetarian, summery and easy to make. All perfect to eat with your homemade casarecce! My hand-operated pasta dough press from Tagliapasta.com. The name “Fusilli” comes from the Italian word fuso, meaning spindle, referring to the type of tool used to make this type of pasta. The traditional method involves winding a ball of dough around a special long metal pin with grooves on it, creating the spiral shape casarecce pasta (also known as "casareccia pasta" - substitute with other small/medium pasta like fusilli, farfalle, penne, orecchiette, ziti, rigatoni, rotini or shells) from the Arabic word Kaskasa, meaning “ to pound small” or the Berber Seksu, meaning “ well rolled“, “ well formed“, or “ rounded“A highly versatile shape that can be topped with any sauce, baked, or put in soups, salads and stir-fry dishes. Elbow Macaroni is traditionally used to make Macaroni and Cheese, but why not change it up and add in some seasonings, proteins, or veggies for a delightful dish. Eggplant - add chopped eggplant (or substitute one of the vegetables for eggplant/aubergine). Eggplant will add to the richness of the pasta once it cooks down. Or, serve these vegetarian eggplant meatballs in the sauce!

Noodles are believed to have originated in China during the Han dynasty, approximately 2000 years ago. Since then they have become a popular food item in many countries and cultures, particularly throughout Asia. Although pasta with caponata isn’t an old traditional combination, it’s become very popular. I’m sure if you try it, you’ll understand why. This recipe makes enough for 4 generous helpings of pasta plus some extra caponata to have as a side dish a day or two later. Cannelloni • Casarecce • Conchiglie / Conhiglioni • Couscous • Ditalini / Ditaloni • Elbow Macaroni • Farfalle (Bow Ties) • Fusilli • Gnocchi • Lasagna • Linguine • Lumaconi • Macaroni / Maccheroncini • Mafaldine or Reginette • Noodles • Orzo • Pappardelle • Penne / Mezze penne (- Rigate) • Ravioli • Rigatoni • Spaghetti • Tagliatelle • Tortellini / Tortelloni Next, add in ground Italian sausage. With a wooden spoon, break up sausage into crumbles and continue to stir until all sausage is completely browned and cooked through.Drain, reserving some of the cooking water, and add to the pan of broccoli, tossing together well for another minute and adding a little cooking water to loosen. Cannelloni originated in the Italian region of Emilia-Romagna and was traditionally made with beef or veal. It has since become a popular dish across the world, often filled with combinations of cheese, spinach, and other vegetables. Clean the livers from possible ligaments and, above all, from the yellow-green part of the spleen that has a bitter taste. Meanwhile, heat vegetable oil in a deep frying pan or small saucepan. Once the oil reaches 180°C, put a few strips in it at a time and fry them! Looking for the measurements?
