About this deal

This is a spicy, rather than a herby dish. My testers don’t think the oregano used by Henry, Phipps, Stein and Kiros adds that much once the heat is ramped up, and the same goes for Kiros’s bay leaf. Both would get lost in my fiery sauce, but may prove more welcome in milder versions. The most popular recipes on the Tortilla Channel are all the seasoning recipes. We have a ton so if you like this spice blend go try some others as well. The following are just a few places to try frango piri-piri in Portugal. You’ll also find it on most menus in the Algarve(sometimes calledfrango piri-piri, frango assado com piri-piri, frango no churrasco, or frango na brasa) but, to really experience proper piri-piri, it’s worth going to a restaurant that specialises in it. Stir in the paprika and oregano then cook the mixture for 3 minutes before adding the lemon juice, red wine vinegar, salt and pepper. Turn the heat down low and cook the sauce for a further 25 minutes.

I’m using only 1 leaf in our recipe for just a hint of aroma, leaving the chillies and lemon juice to do their thing. To make the piri-piri sauce, preheat the oven to 180C/160C Fan/Gas 4. Put the chillies on a roasting tray and roast for 10 minutes. This will impact the color and flavor of the seasoning as it will turn hard in the sun. Keep it in a dark and dry place like your kitchen cabinet or kitchen pantry. Label your pili pili seasoning blend container with the date and name to help you easily identify it. Optional step: pour into a frying pan and cook over medium-low heat for 10 minutes. The cooking methodTraditionally, the recipe calls for piri piri pepper, but you can substitute it with cayenne pepper or red chilli powder.

The bird’s diet matters as well. Ideally it should be free range, and also it should be raised on a good diet of cereals and vegetables. Add the chopped bird’s-eye chillies to the food processor. Pulse to blend the peppers and chillies together coarsely. Alternatively, you can chop them all by hand. Piri piri sauce is Portuguese in origin and it is a versatile tangy (marinade) hot sauce made from piri piri pepper. The hot pepper is the major ingredient in making the sauce with other common ingredients like red pepper, lemon etc The authentic piri piri sauce would call for paprika, oregano, onions, garlic, bay leaves, salt and lemon juice.
