Coulis: A coulis is a simple and delicious sauce made from puréed and strained vegetables or fruits. You can use just about any type of fruit in this recipe but I chose to make a raspberry coulis which I find to be absolutely delicious and a gorgeous crimson color. Raspberry coulis pairs well with so many delicious desserts. You might like to try it with our Flourless Chocolate Cake or our Panna Cotta recipes. As a general guide, we can do around 100 children in 30 minutes or 200 an hour. About 400 in 2 hours. Start by making the almond brittle. Heat the oven to 200C (180C fan)/390F/gas 6 and line a baking tray. Gently heat the golden syrup, sugar and salt in a small pan until melted, then add the almonds and stir to coat.
