About this deal

There are plenty of sipping rums out there, designed to be supped straight up – or maybe with ice. These may be served in a tumbler, or in a snifter for swilling in your palm like brandy. Look for interesting types of ageing, such as the types of barrels used. How long was it aged for, and was a solera system involved? Famously used for sherry, this method involves passing the liquid through a set of differently aged barrels and allowing it time to rest in each, imbuing it with a more complex flavour. Rum is a liquor that is made from sugarcane. It is often distilled and then aged in oak barrels. Milk is a dairy product that is made from the milk of cows, goats, or sheep. The original recipe calls for white rum. I used coconut rum (Malibu) to incorporate intense coconut flavor. Some recipes also call for golden rum. I find white rum more suitable as it tastes more neutral. Golden rum or any aged rum could be too bold-tasting for this drink. The rum and milk drink can be made by combining equal parts of each liquid. However, some people prefer to mix a little more rum than milk. This will create a drink that is more potent.

You can use either pineapple juice or fresh pineapple – I’m providing two variations of the recipe below. When infusing your ingredients, make sure to use whole spices as they are pungent and will provide that robust flavor that is often and naturally found in cremas. The milk is flavored with a variety of spices – cinnamon, nutmeg, star anise, and some extracts are added, too – vanilla, and almond.
