I'm usually psyched at this point because the sauce already has that familiar, tangy chipotle flavor but with some serious zip and vibrancy.

They have excellent balanced flavor, not too smoky, not to much vinegar and the peppers themselves are large, whole high-quality peppers. As it is, once transferred to a sterilised jar, it will last in the fridge, for up to 6 months if left unopened. Once open, consume within a month. For longer term storage, you can freeze individual chipotle peppers in an ice cube tray, placing one pepper or one tablespoon sauce into each hole. Freeze for about 2 hours until solid, then place them in a freezer-safe container or bag and freeze up to 3 months.
