Jammie Dodgers are a sandwich biscuit from the UK, with a jam filling and a heart shaped window in the top biscuit. They are one of my favourite biscuits and I have many childhood memories of enjoying them! This Jammie Dodger Cheesecake is inspired by these yummy biscuits. It has a buttery biscuit base, a creamy vanilla filling with raspberry jam inside, a raspberry jam heart on top and whipped cream, mini Jammie Dodgers and fresh raspberries. To make the cheesecake look like a Jammie Dodger, I used a heart shaped cookie cutter to create a jam centre on top. The effect is so simple to do, and really effective! I used raspberry jam, as it is the classic flavour of Jammie Dodger biscuits, but you could use any jam or curd you prefer. Troubleshooting

Grease your square baking tin with butter, then line it with a long piece of greaseproof paper (baking parchment). Leave an overhang on the two sides so you can easily lift your jammie dodger blondies out once baked. You can make your own homemade jammie dodgers– but I find the shopbought regular size ones PERFECTLY fit the 9×9″ square tin, and make it one jammie dodger per slice! You can use mini ones, or a mixture, or less! It would be hard to use more though… but you get me!

You can swap the cornflour (called cornstarch in the US) for more plain all-purpose flour of the same quantity. The texture of your blondie is shorter if you use cornflour though, which I love! Bake for 25-30mins until the top is lightly golden and there is only a slight wobble in the middle. Allow cooling in the tin before removing and cutting into squares.
