The firelighters will cause the charcoal to catch fire – leave these to burn until they’ve turned about a quarter grey/ash colour. Make flat patties by pressing the marrow mixture together between your hands. Place these onto the Frying Pan. Add the cream and garlic and simmer until reduced – it will take some time +/- 20-30 minutes. More food, less smoke Place the Griddle on your COBB Cooker and let it heat up for at least 5 minutes. Fry the bacon until crispy and set aside. The Cobb has a clever design that sees a small basket for charcoal sit in the middle of the unit: you need only eight to ten briquettes. Around the basket is plenty of space, so air can get pulled through the coals. Below the area is a moat – more on that later. Warm milk to around 43°C (110 degrees F). It should be like warm bath water. Transfer warm milk into a bowl and sprinkle yeast on top. Add in sugar, egg, egg yolk and melted butter. Mix with whisk until well combined. Next stir in flour and salt with a wooden spoon until a dough begins to form. Holding both ends tightly, roll the ‘log’ forward on the work surface and you will see it tighten up and round off nicely.

Whisk the eggs and milk together and place the bread into the mixture so it can lie flat. After a minute, turn it around. You want the bread to really absorb the egg mixture well. Place the Griddle and the Dome Cover on your COBB Cooker and let it heat up for at least 5 minutes. Gently fry your rice for about 5 minutes, stirring constantly, before adding your wine. Add it and cover, allowing the wine to be absorbed by the risotto – about 2 to 3 minutes. Cut 2cm off the top of each bun. Reserve tops. Leaving a 1cm crust around edge of each bun, remove and discard the soft bread centres (see note). Keep rolling until you have a nice shape, then tie off the ends and pop it in the fridge or icebox to set.Press bases of buns down to compact. Place bun tops onto Griddle until you see those chargrilled lines on the base of the bun lids. Remove once toasted slightly.

Lighting the Cobb Premier is simple: place a firelighter cube below the charcoal basket, fill the basket with coal and then light. So your coals have been burning for 30 mins or so and the heat is high inside the Cobb – now the fun bit! Basically the Cobb can be used for a very wide range of cooking – it can act as an oven, a smoker, a grill and simply as a stove for heating up a pan. Simply combine all the ingredients, except the coconut milk, chopped tomatoes and onion, in a dish, cover and allow to marinate for at least an hour. One of the benefits of the Cobb is the array of useful accessories that can enhance its performance. From a fat drainer for healthier cooking or a roasting dome for even more effective roasts to a pizza stone for rustic stone baked pizzas cooked outdoors.After dough has doubled in size, transfer dough to a well-floured surface and roll out into a 14×9 inch rectangle (roughly). Spread softened butter over dough, leaving a ¼ inch margin at the far side of the dough. Remove the Dome Cover and deglaze the pan with a big splash of ‘cooking liquid’ Cook for a further 10 minutes until the Brussels sprouts are cooked. Incredibly there is very little smoke or flames from the Cobb – this is due to the concave shape of the grill grid which means that no fat or juice hits the flames. You might see a few wisps of smoke, but you’re not going to annoy the neighbours! Also, the steel surface of the BBQ base barely gets hot to the touch – however the dome lid did get hotter and so we would recommend keeping the kids from touching it without supervision. An alternative to charcoal are Cobb cobblestones. The Cobb is designed as an environmentally friendly outdoor oven and, as such, it was originally manufactured to use environmentally friendly cooking fuel. Cobb cobblestones are exactly that. Moat – this is a circular metal trough which connects around the fire basket and acts a a drip tray for all the hot juice which comes out of the cooking food. The moat can also contain seasoning and flavouring such as a splash of wine.
