If everything is done right — temperatures are right, grind is spot on, tamp is good, volume of grinds used is good — you should get a shot of espresso come out of the machine in 25 to 40 seconds, depending on the volume you want. A lot of people will compare the Flair Espresso Maker to the La Pavoni lever machines (since both are direct-lever shot pullers); here’s a little secret about the La Pavonis that not many people know: they can’t pull more than two consecutive shots either, without them still tasting good. Flair Espresso has five different models of manual espresso makers to fit the needs of anyone, but choosing the right model is an important first step.

Yet recently, I have found on the same variety of beans and other varieties (dark to medium roast), I normally grind below 1-5, sometimes lower than 1-3. The Flair Espresso Maker’s design, especially with the big, bulky, 272g steel “sleeve” that doubles as a water pressure chamber and holder for the portafilter portion of the machine, can be made super hot and retains heat during the brewing process. There’s a few machines on market that we can compare the Flair Espresso Maker to, when looking at feature vs feature and the lack of electricity or an automated pump. I’d argue no, because you have even less control over water temperatures with the La Pavoni, and they always skew towards too hot, because that boiler has to be hot enough to produce pressured steam for the steaming arm.Also, in the single group, two shots timing tests, I had to clean the piston brewhead assembly between each use, which is reflected in the times. Feeling the travel itch, the 58+ features an easy detachable preheat controller, meaning that you can go off-grid and brew espresso anywhere. We bought the Signature Bundle model, which also includes a second brewing chamber and piston assembly, and an upgraded, very nicely weighted (310g) 39. Having a built in pressure gauge is a nice feature, and it shows you how much pressure you build up using the built in hand pump. Yeah these micro settings on the grinder are really for adjusting the burrs over time as they become warn, from what I can gather.

It easily takes twice as long, if not longer, to pull consecutive shots with the Flair, and this is why they offer the bigger packages featuring two grouphead assemblies with the Flair. The Flair 58 features Flair’s first industry standard 58mm portafilter for enhanced compatibility with brewing tools, as well as our custom Preheat Control System that allows the user to preheat their brew head to one of three different temperatures. It was big and beefy with a lot of metal to retain water heat as well, and the shots tasted amazing from this device, no doubt aided by the sweetness boost the N20 gas provided to the brewing espresso shot. The brewing chamber holds over 60ml of water, but the maximum output will be about 50ml into the cup. Variants of this brewing device have been around since 2004, when it was first introduced as an ESE espresso pod brewing device.
