I would like to replace this out with an thermostat that has the AUTO feature so that it would switch from heat to AC as needed depending on the set temperature. Even in the winter I just have 3 electric heaters for each room and it keeps the camper toasty in the winter. A/C -> blue wire to t-stat - this is labeled as 12 VDC(-), and then the diagram shows that there should be a 12VDC(-) connection to the t-stat.

When I did some work at home here the thermostat instructions explicitly said the blue wire must be connected. A few years ago, in my 2008 Wildcat I tried to change from Dometic analog thermostat to a Coleman Mach digitial just like you have pictured. For example, if you have an 8xxx series control package, you cannot use that control kit with this 9xxx series thermostat.
