However, a new Guild of English whisky makers has recently been established, so expect more defined rules on what can be labelled as an ‘English Whisky’ to follow. The palate is flooded with smooth honey that gushes over dried dark berries, roasted nuts and ground nutmeg. we worked with a master brewer, Jimmy Swan, to develop a unique process that enables us to get the fullest flavour and highest conversion of sugar. The survey found there are currently 38,000 casks of English Whisky maturing in distillery warehouses with an estimated 50,000 casks expected to be laid down by distilleries by the end of 2024.

It offers six core bottlings (see below) and seasonal and single cask releases that will be available here in time. It’s not just rye that gets harvested for this whisky – the fields also contain wheat, oats and even thistle seeds, which all contribute to a spirit that has a mass of complexity. The Forest distillery in Macclesfield Forest has established itself as one of the most consistent operations in the country.

The experts there employ a traditional process of floor-malting, turning the grain by hand over several days. To make this whisky, the Bimber team sources malt whisky from Scotland (with a minimum age of 12 years) and blends it before finishing it in casks that previously contained its own much sought after single malt. The four copper plates gently quadruple-distil the spirit, ensuring maximum contact with the developing vapours and that all impurities are removed.There is currently no specific definition of English Whisky, however there is process being made on creating a statutory definition.
