I follow Nigella Lawson’s tip to freeze egg whites in small zip-lock freezer bags – usually in pairs – which means that I always have egg whites on hand to make pavlovas, meringues, and friands. At the time, it was one of the toughest decisions I had to make, not least because I couldn’t imagine how I could move for all of the personal possessions my twenty-something self had acquired.
