After upgrading our old home modem to a new dual band router, I found that older laptops would only see the 2.I'm expecting to install some drivers or something, but being a total newbie to retropie and linux in general I have no idea how. The only suggestion I can offer, if you have not done so already, would be to update both the wifi and bluetooth drivers to their latest versions, and restart the PC. So I connected to the network with a CAT5 cable, pasted the command into a terminal, rebooted after it completed, and the wifi adapter works perfectly!
