The winemaker is then given total freedom to source the grapes they want and to create the wine they want. Wines that are produced in this way are better for the eco systems which they inhabit and better for the animals and insects that live in those eco systems. Wild indigenous yeasts are used for fermentation; fining and filtration is generally avoided; dry farming, manual labour, the traditional method of horse and plough are other examples of the natural approach.
