My absolute favorite recipe to use adobo sauce with is Mexican lamb tacos. The combination of slow cooked spiced lamb with the earthy, smoky flavor of the adobo sauce is out of this world tasty! Ancho should be sweet berry flavours with a drop of heat, there are several grades of Ancho chilli available To make ancho chili powder, start by drying whole ancho chilies in a food dehydrator or oven. Once they’re dry, remove the stems and seeds and grind the chilies into a fine powder using a coffee grinder or mortar and pestle. Store the powder in an airtight container in a cool, dark place for up to 6 months. Dried guajillo chillies – guajillos are also very popular in Mexico.
