When it comes to the word ‘Fairtrade’ it can be a minefield of information which although is readily available to everyone, it can be a little hard to decipher and understand when you really delve into the specifics. In this article I want to help you understand what Fairtrade really means, how we can recognise if a brand is Fairtrade and what it means for them if they are. It’s not about only looking after what you eat, but also looking after those who source it and where it came from- which is why we make sure to use Fairtrade approved suppliers where we can, with 16 of our bars being Fairtrade certified. That way we know that those who source all the the deliciousness that we put into our bars, are also well looked after. As they say, it’s not about the destination, it’s about the journey! Cocoa beans enter the United Kingdom via different ports, most notably the Ports of Liverpool and Hull. By 2018, more than two-thirds of total cocoa bean demand arrived via the Port of Liverpool. Thanks to its strategic location, this is 1 of the country’s best-connected ports. In fact, the port’s proximity to cocoa manufacturing factories established in Yorkshire and North Wales is an advantage that reduces transportation costs and the carbon footprint in the supply chain. Trinitario is mainly cultivated in Central and South America, the Caribbean and Asia. The beans are a hybrid of the Criollo and Forastero trees. This variety represents around 10-15% of global cocoa production. The beans have a floral, fruity flavour. The cocoa beans from Trinitario trees are classified as fine flavour cocoa. There are exceptions, however, as Cameroonian cocoa beans produced from Trinitario trees are classified as bulk cocoa beans. Well-known varieties are Carenero, Rio Caribe and Sur del Lago. Your Responsibilities A recent review published in May 2017, researched the flavanols and its effect on the brain function. Flavonoids are plant nutrients that are found incorporated not only in chocolate but in many fruits and vegetables, red wine, and tea. Flavonoids are believed to possess anti-viral, anti-tumor, anti-inflammatory, anti-allergic, and antioxidant properties that help in improving memory by increasing the brain oxygen level and blood flow, ultimately increasing the electrical activity of the brain. According to a 2011 study, flavanols found in cocoa have a positive impact on the psychological processes and effectively prevent age-related cognitive dysfunction. The Fairtrade Minimum Price supports the farmers that grow products to become less vulnerable to poverty.In a nutshell ‘Fairtade is about better prices, decent working conditions, local sustainability, and fair terms for farmers and workers in the developing world.’ [2] Fairtrade is a way in which to make the trade between developed countries and developing countries fair and making a difference to the lives of the people who grow and produce the ingredients and products we buy. And speaking of flavourings, do you want any in your chocolate? Purists may enjoy their dark chocolate unadorned, but in our testing, we admit to being completely seduced by all the chocolatiers’ imaginative flavour pairings – from subtle salt crystals to exotic citrus ganache – and we hope you are too. How much should you spend?

Especially the growing demand for darker chocolates may be interesting for exporters of cocoa beans, as these products demand a larger percentage of cocoa. The trend for healthier chocolate will likely only develop further.
