It is such a stunning location to be working in, with views of the Friulian Alps and endless vineyards! Amaretto di Amore – This unique expression is produced in Kentucky (by Sazerac), made from bitter almonds and blended with apricot juice. Today, the producer is in the hands of his three grandchildren: Guiseppe, Bruno and Lisa, who continue to make a range of liqueurs, brandies, and of course grappa, using the innovative methods introduced by Bepi, the main result of which was to produce spirit that came off the stills clear, rather than amber in colour. The nose drew me in with two of my favourite desserts and continued onto the palate with superb integration of flavours.

This is the venetian legend behinh the Amaretto Salizà, a true almond distillate and a unique recipe without colourings and artificial aromas created by master distiller Bepi Tosolini. I'd say that the techniques used to make the rum change the flavour more than the raw material between molasses and cane honey, so it'll be other factors that. This is something to have on hand for old-timey cocktail recipes, but amaretto tends to work better most of the time.

When I last visited the distillery I saw how a small team were making these liqueurs in small batches, carefully monitoring the process.

On the nose aromas of freshly ground almonds toffee and orange peel dominate whilst the palate is light indulgent and silky in style with a long finish.

Saliza refers to one of the first paved streets in Venice, near Piazza San Marco there is a small Saliza (one of the smallest allies in Venice) where you can still find a red stone in the shape of a heart.
