The latest step in the Louth Distillery journey is that the premises have been opened up for the public to take tours and see where the magic happens, as well as trying out various flavours of Pin Gin, or even making your own bottle. Thomas Dakin gin has been recognised for its quality at many awards ceremonies including the Best British London Dry Gin in The Gin Masters 2018, a global competition judged by industry experts, and Best Gin in the prestigious The Grocer Drink Awards, the only competition to be judged by a mix of consumers and industry experts. Next time we visit Louth we’ll definitely be trying out the distillery’s Gin School. Using your own still you’ll be shown how to make your own personalised gin, and take away a 70cl bottle at the end.

I don’t remember exactly when I stopped drinking martinis but I do remember someone telling me that you shouldn’t drink gin if you ever plan on having plastic surgery because it does something to your skin. I know it sounds crazy, (that gin affects your skin, not that I would want to have plastic surgery…although I reserve the right to change my mind in the future) but that may have been a factor all the same. Another was that I started feeling not-so-great, and completely dehydrated, in the middle of the night after a couple of martinis – which is why I don’t drink much red wine anymore, because it has the same effect. Such a fine distillate needs to be sealed with a touch of class and the Starcap, with a diamond effect on the side, is the perfect closure to enhance the purity of a product of such sublime flavour. Bols Genever – If you are looking for an old gin recipe, this is the right one. It has a sweetened taste. This is also called Holland gin or Dutch gin.Uplifting citrus notes come from sweet orange peel and grapefruit which David says "is great because it adds some astringency to the palate, and you get a good citrus, acidic and slightly bitter aftertaste." Finally, cardamom, "gives you a great spicy and full of Eastern promise gin."

The still is charged with wheat neutral spirit, water and then the six botanicals carefully weighed and tipped into the still where they are left to infuse in the alcohol (at around 60% alc./vol.) for a 16-hour steeping period, usually overnight. All the botanicals are distilled together, according to the traditional London dry method. This is crucial as distilling together (rather than separately and then blending) allows the botanicals' essential oils to interact during distillation. Martin Miller's London Dry Gin – This makes a fantastic Martini. It is one of the newer gin names in the market. Martin Miller is a modern yet traditional gin. When the temperature in the still reaches 81 to 82°C the vapours start to rise into the genever helmet at the top of the still and eventually up into and across the lyne arm to the condenser. The condenser is also vintage and is a traditional wooden worm tub with a copper worm, the type of now rare condenser beloved by malt whisky aficionados.

No.3's recipe is based on really top-quality juniper sourced from Italy, overlaid with coriander, a vital component to most classic gins as it contributes a citrusy, spicy overtone. Angelica root, another classic botanical, is also important to give the dryness associated with a traditional London dry gin.

Bombay Sapphire London Dry Gin – This is perfect to drink over ice. It comes with a mix of almond, cubeb berries, and grains of paradise which gives it a delicious taste. No.3 Gin was conceived by the world's oldest wine and spirits merchants, London's Berry Brothers & Rudd, who sought a respected authority to develop the recipe for their new gin. This spirit flows from the condenser into the glass dome covered eprouvette which enables the distiller to monitor the spirit run to assess when to make the all-important cuts from heads to heart and from heart to tails. Made by historic London wine merchants Berry Bros. & Rudd, the six-botanical spirit took two years to develop with Dr David Clutton – a man who holds a PhD in gin (yep, that exists). It was worth the effort.Synthetic Access to the Chlorocyclopentane Cores of the Proposed Original and Revised Structures of Palau’amine, We tried the original along with Valencian Orange, Premium Pink and Navy Strength. It seemed everyone in our tasting group had a different favourite! Mine was the Premium Pink, which had a sweet fruity aroma with a spicy and citrusy twist in the flavour.
