About this deal

Simple syrup is a mixture of water and caster sugar. A true simple syrup is made by mixing equal parts of water and sugar together in a saucepan and then heating until the sugar is dissolved. From lemon to limoncello, approximately eighty days elapse. It’s a relatively simple process but each producer boasts his or her own limoncello secrets. For example, some use only the rinds, while others marinate the pulp and seeds. People experiment with different ratios of sugar to water in the syrup. The location where the limoncello steeps, with varying temperature and relative humidity, can also play a role. Ultimately, these factors affect the flavor as well as the opacity and texture of the final product. One batch of the final product may be bright, neon yellow; another may be more cloudy and opaque as a result of the emulsification of the sugar and lemon oils.

This off-the-beaten-path family agricultural enterprise is centered within the compound of an old convent. On the picturesque grounds, the third generation of the Pollio family cultivates olives, lemons, and fruit trees, lovingly making up homemade products from limoncello to chocolate and other digestivi made with walnuts and fennel. You can extract a little more flavor from lemon peels if you shake the bottle with infused lemon peels once a day. This step is optional if you’re using Everclear alcohol or other 190+ Proof alcohol but it’s super important when you make Limoncello with vodka. Piemme is one of the larger producers of limoncello on the Amalfi Coast; it’s owned by a conglomerate that holds hotels in the area. In spite of its large scale, Piemme insists on an artisanal approach to its limoncello production and is active in the consortium of Sorrento lemons. You can arrange for a tour of its facility and watch the fluorescent yellow liqueur be bottled before grabbing some to take home. 3. Look for homemade, artisanal varieties and unique products Another nuance that nobody talks about is that 1 cup sugar + 1 cup water is NOT equal to 2 cups of sugar syrup! Sugar dissolved in water reduces almost by half in volume. So 1 cup sugar + 1 cups water will give about 1 ½ of syrup. That’s why it’s super important to follow the recipes and its measurements. Sfusato Amalfitano: The word sfusato comes from the Italian word for “spindle,” and is a visual reference to this even more elongated, pointed lemon native to Amalfi.Besides enjoying Limoncello as a digestive drink you can also make a delicious Limoncello Cake. Super soft and flavorful it’s like a rum cake, but much better 😉 Don’t worry about how much time your bottle is sitting out infusing, the high proof liquor will prevent mold from growing. However, should you see any signs of discoloration or something fuzzy growing, discard, sanitize your bottles, and start over. All these benefits may certainly be true with whole lemons, it might not be particularly effective when you are only drinking the oils that have infused from the peels! Nevertheless, limoncello may provide you with a limited amount of the health benefits listed above. Gluten, Carbs, & Calories In Limoncello The famous tart-sweet liqueur known as limoncello requires only four ingredients: lemon peels, grain alcohol, sugar, and water. However, like many of Italy’s most important culinary traditions, the simplicity of the recipe can be deceiving. Traditionally, lemons from the Amalfi coast are used to make Limoncello. My favorite lemons are Meyer lemons which grow all over California. In fact, I have a tree in my yard. Spirit Alcohol

Transfer the mixture into a decorative bottle large enough to hold the infused mixture and the simple syrup. Don’t try and re-strain into the bottle your alcohol came in! You won’t have enough space to add in the simple syrup. Alcohol, especially high proof alcohol has lower density than water (yes, water can be measured by weight and it’ll be equivalent to milliliters).HOW LONG TO INFUSE: at least 8 days, best 3 weeks (if you’re using high proof alcohol like Everclear). With lower proof alcohol, like vodka it’s best to infuse for 1 month or more. In addition to limoncello, the shop also sells honey, marmalade, pastries, and natural cosmetics made with lemons. The shop is impossible to miss with lemon products literally spilling out onto the cobblestones alongside the staircase leading to Amalfi’s cathedral façade. Taste and quality can vary tremendously from producer to producer and from bottle to bottle. Bad limoncello tastes like window cleaner; good limoncello tastes pure and invigorating, like imbibing a ray of sunshine. It has the most neutral taste and has the best capacity to extract the most flavor and aroma from lemon peels. However, if you have already had issues with grain alcohol in the past, it’s probably best avoided. What Next?
