With the heritage of his father’s experiences in the durum wheat cultivation and milling, Benedetto Cavalieri inaugurated, in 1918, the Mill and Pasta Factory Benedetto Cavalieri planned with the clear intent to produce First Choice Pasta with his ‘fine and selected’ durum wheat from the sunny hills of Apulia. From that day on the motto has been: Cavalieri was also largely responsible for introducing logarithms as a computational tool in Italy through his book Directorium Generale Uranometricum. We mentioned above that his appointment to Bologna had been initially for a 3-year period. This book of logarithms was published by Cavalieri as part of his successful application to have the position extended. The tables of logarithms which he published included logarithms of trigonometric functions for use by astronomers [ 31 ]:- Also, the pasta is made using traditional techniques passed down through the generations known as the ‘delicate method. This involves long kneading, slow pressing, drawing and drying the pasta at a low temperature. As a result, the pasta retains its natural chewy texture and delicious nutty flavour. Cavalieri corresponded with many mathematicians including Galileo, Mersenne, Renieri, Rocca, Torricelli and Viviani. Torricelli was full of praise for Cavalieri's methods writing (see [ 1 ] ):-After a year in Milan, in 1616 he transferred to the Jesuati monastery in Pisa, the San Girolamo monastery, where, except for one year spent in Florence in around 1617, he remained until 1620. In Pisa, Cavalieri was taught mathematics by Benedetto Antonio Castelli, a lecturer in mathematics at the University of Pisa. Castelli had been appointed to Pisa in 1611 and had a reputation as a fine teacher, students coming from many different regions to study with him. Castelli was a Benedictine but, as there was no Benedictine monastery in Pisa, Castelli lived in the Jesuati monastery there. He taught Cavalieri geometry and introduced him to the ideas of Galileo. Cavalieri's interest in mathematics had been stimulated by Euclid's Elements and, after meeting Galileo, he considered himself a disciple of the astronomer. The meeting with Galileo was set up by Cardinal Federico Borromeo, who had corresponded with Castelli. It is since 1800 that the Cavalieri Family has been committed to the growing of wheat in purposely chosen fields in the heart of Apulia. A ferreto is a thin metal rod or wire used by housewives to make pasta. Small pieces of pasta are wrapped around the rod and then slid off. This type of pasta is sometimes called ferretti. Fusilli was originally a ferretti pasta as is fileja pasta from Calabria.
