Wouldn't mind having my own personal copy at some point (which makes it a higher rating for me than 5 stars). I'm a decent home cook and have gotten some basic techniques down, but I'm pretty lost when it comes to herbs and spices unless I'm following a recipe.The book is my favorite kitchen companion and I have owned a copy for many years and referred to it often and as of late have been making quite a study of herbs that I have yet to savor. I teach an undergraduate course on Feast, Fast, and Famine in the Middle Ages because questions about production, consumption, and sustainability are crucially important for us all. This book would be a "must" for the adventurous cook venturing into the unknown waters of Arab and Asian cooking.

Each herb/spice has a description of its taste (sometimes these sound a bit too formal/wine tasty for me) and how it is prepared. The Complete Book of Spices' also includes more than 80 delicious recipes, using both individual spices and blends, ranging from Moroccan tagines and Middle Eastern kofta to European spiced breads and cakes. I consider myself knowledgeable of ingredients; I almost never come across an recipe ingredient that I haven't at least heard of.
