The Clever Coffee Dripper has simplified the pour-over concept by creating an easy way to brew without any bitterness, acidity or loose coffee grounds. What we do know is that the Clever Dripper was invented in Taiwan and has been around since the early 2000’s. Add fresh ground coffee to the dripper (with Filtropa filter paper) and brew for two and a half minutes. The Clever Dripper is a mix between a French Press and a Pour-over coffee maker, bringing the best out of the two extraction methods; immersion and filter. The Clever Dripper combines immersion and drip-filter brewing styles for a quick, easy, mess-free cup of coffee.

However, the Clever Dripper uses a coffee filter paper to filter the coffee once your brew is complete. I actually have a bit of a personal love story with the Clever Dripper that goes back to 2015 when I opened and ran the first filter coffee only bar in Amsterdam. Make sure you’re always pouring the water directly into the coffee, and not down the sides of the filter paper (this is where a Hario Kettle comes in handy!That is probably also why Berg Wu, another World Barista Champion who I met in Taipei in 2016 also used only the Clever Dripper at this café. We recommend washing by hand in warm soapy water, then rinse thoroughly in clear water to remove any residue. This includes scales, a decanter, freshly boiled water (I use the Barista Hustle recipe that you can find here), a stirrer, a grinder and 22g of your favourite coffee of the moment. You will get consistent results that bring together the best parts of both a full-immersion steep and a paper filtered brew. After a total of about 3 minutes gently place the Clever Coffee Dripper onto your carafe or coffee mug. With a stop tap at the bottom of the cone, the Clever Dripper gives you greater control over your steeping time.

Sit the dripper on a cup and the valve at the bottom will open to release the freshly brewed coffee. Like a V60, you pour hot water over coffee grounds in a filter, but the Clever Dripper features a valve system which allows you to extend the duration of your brew.Generally speaking, I use the Clever Dripper to brew a larger cup of coffee with a yield of around 300 – 320ml.
