If I understand correctly, the blu rays are similar to the dvd extended editions released originally, and the remastered ones change the colour to look more like the theatrical releases. Jackson acknowledges the difficulty in starting the film, so the fact that the beginning is one of the very biggest things changed in the Extended Editions is a great focal point.
