Prolonged contact with the flor - the layer of yeast which grows on the surface of the wine and is responsible for Manzanilla's unique character - gives delicate aromas reminiscent of salty air and chamomile. Intense nutty flavours with hints of apple and herbs and that saline tang that explodes on the tongue. It has lots of caramel and creme brulee on both the nose and the palate, and a lingering, smooth finish.

Consequently, an Amontillado sherry will take on the flavours produced by the flor as well as contact with the air.

These age, for as few as two or as many as ten years, under a layer of flor and when bottled are meant to be consumed right away.
